We made this the other night and it was really good and simple! I loved the ricotta cheese in it, and the red pepper flakes gave it a nice kick.
Baked Ziti Arrabiata
(slightly adapted from Rocco Dispirito’s recipe)
Ingredients:
1 Tb salt
8 oz ziti or rigatoni (I used whole wheat rigatoni)
1/4 tsp red pepper flakes
2 cups marinara sauce (get a good one!)
16 large basil leaves, torn in pieces
1/4 cup Parmesan, freshly grated
3/4 cup part-skim ricotta cheese
1 cup part-skim mozzarella cheese, shredded
Directions:
1. Preheat oven to 375 degrees. Boil 4 quarts of water and add salt. Add pasta and cook to al dente. Drain and return to pot.
2. Add pepper flakes and marinara to cooked pasta and stir. Stir in basil and half the Parmesan. Mix all together. Season with salt and pepper.
3. Transfer the mixture to a baking dish. Dollop ricotta on surface of the pasta. Place in oven and bake for about 7 minutes. Remove from oven and scatter mozzarella evenly over top of pasta. Then sprinkle on remaining Parmesan.
4. Turn on broiler. Place dish on center oven rack. Cook until cheese is lightly browned.
